Our pork cutlets come from chestnut-fed heritage pasture-raised pigs, which are only available from chestnut season until November or December. Raised on organic sweet chestnuts, these pigs thrive in a stress-free environment, rotated on pasture to support regenerative farming practices. This sustainable method not only benefits the pigs but also enhances soil health and crop productivity, resulting in tender, nutrient-rich meat.
